Mandarin Cantaloupe Dessert Salad.
Mandarin Cantaloupe Dessert Salad
1 each fresh cantaloupe
1 C orange juice
1 tsp lime zest
1 Tblspn lime juice
¼ tsp kosher salt
3 Tblspn honey
½ C flaked coconut
2 slices lime
Cut the cantaloupe in half and scoop out the seeds, cut cantaloupe meat into chunks and put it a bowl.
Combine the orange juice, lime zest, lime juice, salt and honey in a bowl. Mix this well and pour over the cantaloupe chunks.
Chill the cantaloupe mixture thoroughly, about 2 hours, in the refrigerator.
Before serving sprinkle with coconut and garnish with a lime slice, serve as a side salad or dessert!
