      From the Panhandle's home for good news and great mornings, Chef Bud Andersen's recipe for Mandarin Cantaloupe Dessert Salad.

      Mandarin Cantaloupe Dessert Salad

      Ingredients1 each fresh cantaloupe1 C orange juice1 tsp lime zest1 Tblspn lime juice 1/4 tsp kosher salt3 Tblspn honey 1/2 C flaked coconut2 slices lime

      PreparationCut the cantaloupe in half and scoop out the seeds, cut cantaloupe meat into chunks and put it a bowl.

      Combine the orange juice, lime zest, lime juice, salt and honey in a bowl. Mix this well and pour over the cantaloupe chunks.

      Chill the cantaloupe mixture thoroughly, about 2 hours, in the refrigerator.

      Before serving sprinkle with coconut and garnish with a lime slice, serve as a side salad or dessert!
