Good Life,Good Food:Tenderloin Stack
The great flavor of the beef is a natural with the earthy flavor of the portabella and roasted red bell pepper. Serve this to your guests or family and Enjoy beef at its finest, paired with mushrooms and a nice bleu cheese!
- 1 ea 8 oz beef filet, sliced into 4 equal slices
- 1 ea portabella mushroom
- 1 C balsamic vinegar
- ¼ C garlic roasted chile olive oil Amarillo Grape & Olive
- 1 tspn pepper supreme
- ½ tspn kosher salt
- ½ ea red bell pepper, roasted
- 1 Tblspn bleu cheese crumbles
- 1 tspn balsamic vinegar
Mix together 1 C balsamic, garlic roasted olive oil, pepper supreme and kosher salt. Place cleaned mushroom in the marinade and let set overnight or at least 2 hours.
Preheat grill to medium high
Season filet pieces with kosher salt and coarse black pepper only. Place filet pieces and portabella on the grill. Grill filet about 1 to 2 min a side. Add the portabella and grill until begins to soften.
When done, place portabella cavity side up. Place roasted red pepper on the mushroom. Shingle the filet pieces on top of the pepper, and top with bleu cheese crumbles. Drizzle bleu cheese with 1 tspn of balsamic vinegar.
The marriage of flavors makes this a great light beef dinner with a unique look and an even more unique flavor.
