Baja Burger w/chipotle caramelized sweet onions
2 lbs 80/20 ground chuck
2 C caramelized sweet onions (recipe to follow)
½ C guacamole
12 slices bacon
6 slices romaine lettuce
6 slices tomatoes
1 C goat cheese crumbles (optional)
Kosher salt and McCormick coarse grind black pepper
6 ea ciabatta hamburger buns
For caramelized sweet onions
1 ea sweet onion, halved and sliced thin
1 Tblspn chipotle pepper in adobo sauce
1 Tblspn beef broth
1 Tblspn balsamic vinegar
1 Tblspn extra virgin olive oil
1 Tblspn minced garlic
1 Tblspn brown sugar
Preheat grill to medium high heat
Pat the ground chuck into 6 equal patties, season with kosher salt and coarse black pepper. Set aside until ready to grill.
Combine the onion, chipotle peppers, beef broth, balsamic vinegar, oil, garlic and brown sugar in a saute pan with a lid. Cook over medium heat for 15 to 20 minutes, stirring occasionally, until onions are caramelized and most of the liquid has evaporated. Remove from the heat and set aside.
Grill ground chuck patties to desired doneness. Grill bun and build burgers by spreading bottom bun with guacamole and placing a leave of romaine and tomato on top. Top with burger patty, two slices of cooked bacon, caramelized onions and topped with goat cheese crumbles. Top with bun and enjoy the fresh flavors of southern California, combining the freshness of the guacamole with the texture of the romaine and tomato and the savory flavors of the ground chuck and caramelized chipotle onions! 2 lb ground chuck
½ C mayonnaise
3 cloves roasted garlic, puree
¼ C Dijon mustard
8 slices swiss cheese, thinly sliced
4 slices ham, thinly sliced
2 ea dill pickles, sliced thin
6 ea ciabatta buns
Preheat grill to high
Pat the ground chuck into 6 even patties. Season the patties with kosher salt and coarse black pepper on both sides. Grill for 2 to 3 minutes on both sides for a medium doneness. When they are done remove from the grill.
Meanwhile, combine the mayonnaise and roasted garlic in a small bowl and season with kosher salt and coarse black pepper to taste.
Spread both sides of each bun with the garlic mayonnaise and Dijon mustard. Place a slice of cheese on the bottom bun, place grilled chuck patty on top of the cheese, then top the chuck patty with a slice of cheese, add a slice of ham and the pickles. Place the top bun on the burger and wrap it in foil. Place the wrapped burger back on the grill.
Using a heavy pan or a brick wrapped in foil, press down on the burger about 30 seconds to a minute. Close the grill lid, and continue grilling for 1 to 2 minutes or until the cheese has melted and the bun has become pressed and firm. Its like bringing a piece of South Beach or Cuba to your grill! Great way to celebrate the return of grilling season! Enjoy!
