4 ea Eddys jalapeno sausage
6 ea Hormel jalapeno bacon
1 ea small sweet onion
½ ea green bell pepper, julienned slice
1 ea seeded and sliced jalapeno pepper
½ ea roma tomato, seeded and chopped
1 Tblspn cilantro, chopped
1 C Sweet Baby Rays BBQ sauce
4 ea hot dog buns or hoagie rolls
Combine the chopped, tomatoes, cilantro and jalapeno slices mixing well. Refrigerate up to overnight.
Preheat your grill over medium high heat
Wrap the sausage in one piece of jalapeno bacon, you can cook the bacon and not wrap the sausage as an option.
Grill the sausage over medium high heat, turning occasionally while brushing with Sweet Baby Rays BBQ sauce.
While the sausage is grilling, heat 2 Tblspn of oil or butter in a saute pan. Add the onion and green peppers and saute until softened.
Warm the hoagie roll or bun, if you precooked the bacon, lay a slice or two in the bun, and place the grilled and sauced sausage in the bun between the slices of bacon. Top with the sautÃ©ed green peppers and onion, and then the chopped tomatoes, cilantro and jalapenos! Itâ??s layers of flavors heat, sweet and fresh!
