Sweet Heart Salmon with Lemon Shrimp Sauce

- 4 ea 6 oz salmon fillets
- 1 tsp brown sugar
- 1 tsp McCormick smoked paprika
- ½ tsp kosher salt
- ½ tsp McCormick Coarse black pepper
- ¼ tsp McCormick cayenne pepper
- 2 Tblspn Tuscan Herb olive oil Amarillo Grape and Olive
- 2 Tblspn garlic, chopped
- 4 ea green onions, sliced
- 2 ea large lemons, juiced (about ½ C of juice)
- 2 tspn McCormick Pepper Supreme
- 1 lb 36-40 P&D shrimp
- 1 ½ C heavy cream
- 4 oz butter, cut into pieces
Preheat your grill to medium high heat, oil grates
Mix together the brown sugar, cayenne, kosher salt and coarse black pepper.
Season salmon fillets with the spice mixture and grill to desired temp. About 3-4 minutes a side.
While the salmon is grilling, heat olive oil over a medium high heat in a saute pan. When olive oil is hot, add garlic, WHITES only parts of the green onion, lemon juice and pepper supreme.
Cook on low, stirring often, until simmering.
Add the shrimp and let cook, until the shrimp is done, turning pink and beginning to curl. When the shrimp is done, turn the heat off to the pan.
While the shrimp is cooking, heat the heavy cream in a small sauce pan over low heat and simmer about 5-7 minutes to reduce and thicken slightly.
Begin adding the butter pieces one at a time, whisking well between adding, and letting pieces melt before adding more. When the mixture begins to thicken or become frothy. Remove from heat.
Add the contents of your cooked shrimp saute pan, and the green onion tops and stir to combine well.
Serve this wonderful sauce over your grilled salmon with a nice fresh grilled asparagus or a broccoli au gratin. Enjoy this special time together on the day set aside to show your feelings for your sweetheart! Enjoy!
