Sweet Garlic Roasted Chicken

A wonderful comfort food dish for any time of the year.


  • 2 lbs red potatoes quartered
  • 4 ea boneless skinless chicken breast
  • 3 Tblspn olive oil, Tuscan Herb infused A.G.O
  • ½ tspn McCormick Pepper Supreme
  • 2 Tblspn garlic, finely chopped
  • 2 Tblspn brown sugar, packed
  • 1 ea ½ juiced, ½ cut into wedges
  • Pinch McCormick Red Pepper Flakes
  • 2 Tblspn fresh parsley chopped


Preheat oven to 425 degrees

Toss the quartered potatoes in 1 Tblspn of the Tuscan Herb infused olive oil from Amarillo Grape and Olive, season with kosher salt and coarse black pepper and ½ tspn of Pepper Supreme.

Spread on a small sheet pan and roast until potatoes begin to brown 25-30 minutes.

While roasting, heat the remaining olive oil in a saute pan and over medium heat, add the garlic and cook until lightly golden brown.

Remove from the heat and stir in the brown sugar, pepper flakes and lemon juice.

Place roasted red potatoes in a baking dish, pushing them to both sides of the dish and placing chicken breast in the center of the baking dish. Season the chicken breast with kosher salt and coarse black pepper and drizzle the brown sugar garlic mixture over the chicken breast, and a bit on the potatoes. This is a great opportunity to add a vegetable such as asparagus or broccoli.

Cook at 425 degrees for 20 to 25 minutes until the chicken is cooked through and the potatoes are tender.

Remove from the oven, place chicken on the cutting board and slice. Add the parsley to the dish and toss with the potatoes. Serve chicken with potatoes and drizzle with pan juices.
