Good Life, Good Food: St. Louis Hyaaah Dog

From the Panhandle's home for good news and great mornings, Chef Bud Andersen's recipe for dogs.

St Louis "Hyaaah" Dog

4 ea ¼ lb beef dogs or sausages

1 ea large onion, caramelized

1 ea bell pepper, julienned and grilled

4 slices apple wood smoked bacon

2 Tblspoons pickled jalapeno peppers

4 slices provolone cheese

4 ea hot dog buns

On a grill over medium high heat, grill your hot dogs or sausages.

Caramelize your onion and grill the julienne cut green bells.

Build your dog, by laying the provolone cheese in the bun, followed by the cooked bacon. Add the dog, grilled bells and top with caramelized onions. A St Louis Classic with great layers of flavors! Enjoy!!

Gorilla Mac & Cheese Dog

4 each ¼ lb beef hot dog

2 C creamy mac & Cheese (I use a smoked gouda cheese mac)

4 each pecan wood smoked bacon

2 C Frenchs fried onions

4 each buns or hoagies

Place dog in bun, top with slice of bacon. Spoon creamy mac and cheese over dog and bacon and top with fried onions!

Crazy Cajun Dog

4 each Andouille sausage or bratwurst

2 C caramelized onions

½ C spicy brown mustard

½ C Sweet Baby Rays BBQ sauce

4 ea buns or hoagies

Top grilled sausage with spicy brown mustard and Sweet Baby Rays BBQ, then spread caramelized onions over top of dog. For a sausage that has both the "heat and the sweet"! Enjoy!
