Orange Sirracha Shrimp Pineapple Cilantro Rice Bowl

Enjoy a cool and light dish, perfect for that evening meal after a busy day or relaxing on the weekend. The fascinating combination of Sweet Pineapple Rice and the Spicy Shrimp with the coolness of fresh Avocado make for a dish full of freshness and flavor. All complimented with the pop of the citrus lime and orange zest.

Ingredients:

  • 1 lb 16/20 P&D shrimp
  • 3 Tblspn extra virgin olive oil Amarillo Grape & Olive
  • 2 Tblspn Kikkoman Sirracha Sauce
  • ½ C honey syrup
  • ½ ea fresh orange, juiced and zested
  • 1 tsp coarse black pepper
  • ½ ea avocado, peeled, seeded and sliced
  • 2 C uncooked Uncle Bens white rice
  • 2 C water
  • ½ C crushed pineapple
  • ½ tspn grated lime zest
  • ¼ tspn salt
  • ¼ C fresh cilantro, minced

Preparation:

Combine white rice, water, salt, pineapple and lime zest. Cook on stove top, when done flake the rice with a fork and add cilantro. Mix well and set aside.

In a saute pan warm the olive oil, when warm add shrimp, toss to coat and cook. When shrimp begins to turn pink, add the honey and toss, add Kikkoman Sirracha and toss. Let simmer for 1-2 minutes, add orange juice and zest and toss.

Place Pineapple rice in a bowl, top with saute shrimp on one side of the rice and fresh avocado on the other side. Top with McCormick coarse grind black pepper.
