March Madness Reuben Sliders

Not only are you serving an IRISH delight, but it is great for March Madness parties or just having the guys over to watch some hoops Madness.

Ingredients:

  • 12 ea slices of pumpernickel rye, cut in half
  • 12 slices big eye swiss cheese
  • 1 lb shaved corned beef
  • 8 oz sauerkraut, drained
  • 2 Tblspn butter, melted
  • ½ C mayo
  • 2 Tblspn sriracha ketchup
  • 2 Tblspn sweet jalapenos, chopped
  • ½ Tblspn onion, grated
  • 1 Tblspn lemon juice
  • Dash McCormick Smoked Paprika


Preparation:

In a bowl mix well the mayo, sriracha ketchup, sweet jalapenos, onion, lemon juice and smoked paprika. Mix till blended well. Place in refrigerator for a couple hours so flavors can marry.

In a saute pan, place the corned beef and kraut and a dab of your butter and saute together just heating through.

Butter each slice of rye bread on one side and cut in half.

In a saute pan over medium high heat, place a slice of bread, take a slice of cheese and place on each slice of bread.

On one slice half of the rye bread, place some of the corned beef mixture, on the other half spread some of your sauce.

Put the two slices together and grill until rye is toasted.

Serve with a roasted new potato with some fresh parsley.

An ice cold adult beverage and you are set! Enjoy!
