Grilled Shrimp w/Mango Radish Salsa

What a cool fresh and flavorful way to start your Memorial Day weekend! The wonderful grilled shrimp in the jalapeno lime balsamic are complimented nicely with the fresh refreshing flavor and crispy texture of the mango/radish salsa! A great way to begin summer in your “Good Life”!

Ingredients

  • 12 ea 16/20 P&D Shrimp
  • ¼ C Jalapeno Lime Balsamic Amarillo Grape & Olive
  • 1 Tblspn extra virgin olive oil
  • Kosher salt and McCormick coarse black pepper
  • 2 ea limes
  • 2 ea mangoes, diced
  • 5 ea radishes, diced
  • ½ ea red onion, diced
  • 1 Tblspn chili powder
  • ½ C fresh cilantro, chopped
  • 2 Tblspn Jalapeno Lime Balsamic Amarillo Grape & Olive
  • Kosher salt and McCormick coarse black pepper

Preparation

In a large bowl, mix the balsamic and extra virgin olive oil, kosher salt and coarse black pepper. Add the shrimp and let marinate for about ½ an hour.

Preheat your grill to medium high

Grill marinated shrimp on each side until the color changes to a pink about 5 minutes on each side.

Remove the peel from the limes and cut between each membrane to remove segments. Place the segments in a bowl and squeeze any juice left in the lime.

Add the remaining ingredients and mix. Season with kosher salt and McCormick coarse black pepper.

Place grilled shrimp on the plate and top with the mango/radish salsa!
