2 lbs 93% lean ground beef
1/2 C grated carrots
1/2 C chopped scallions
1 tsp fresh ginger, grated
1 Tblspn Kikkoman reduced sodium soy sauce
1 tsp Kikkoman sriracha sauce
8 slices Dole Pineapple
8 ea whole wheat buns
8 ea lettuce leaves
Pineapple Teriyaki Sauce:
1/2 Tblspn cornstarch
1/4 C cold water
1/4 C Kikkoman low sodium soy sauce
1/2 C pineapple juice
3 Tblspn brown sugar
1/2 tsp fresh ginger, grated very fine
1 ea small garlic clove, mincedPreparation:
Preheat your grill to medium high.
Gently combine the ground beef, grated carrots, scallions, ginger, soy sauce and sriracha sauce. Form into 8 patties try not to over work the meat.
Combine the cornstarch in cold water and dissolve. Set aside.
Mix soy sauce, pineapple juice, brown sugar, grated ginger and garlic in a sauce pan over medium low heat. Bring to a boil and simmer until sauce reduces about 15 to 18 minutes. Add cornstarch water mixture and simmer until thick, about 2 minutes. Remove from heat and set aside to cool.
P lace patties on the grill and cook for 5-7 minutes on each side or until burgers are cooked to desired doneness. While burgers are cooking, grill the pineapple slices for 2 to 3 minutes a side.
Serve your Teriyaki burgers by placing the cooked burger on a grilled wheat bun top with 1 Tblpsn of your teriyaki sauce, then a slice of grilled pineapple! Serve with fresh fruit or salad for a wonderful spring meal! Enjoy!
