Good Life, Good Food: Crab melt and West Coast melt for March Madness
Serve as a great weekend meal or when the gang is over for the Madness.
- 8 oz cream cheese, softened
- 6 oz crabmeat, drained and flaked
- ¼ C shredded Colby jack cheese
- 2 Tblspn green onion, thinly sliced
- 1 tspn horseradish
- ½ tspn Tabasco sauce
- 2 ea ripe avocado, sliced thin
- 3 Tblspn butter
- 8 slices light rye bread
In a bowl mix, cream cheese, crabmeat, jack cheese, onion, horseradish and tabasco. Mix together well. Place in the refrigerator for an hour up to overnight.
In a saute pan or on a grill over medium heat, butter one side of two slices of rye bread. Spread both sides of the other side of each slice with the crab mixture. Top one slice of the dressed bread with sliced avocado. Put the two slices together and grill to a golden brown. Great for any event! Cut into quarters and serve as finger sandwiches at parties. West Coast Melt
Fresh, flavorful and PERFECT for that light evening meal or your weekend meal on the patio.
- 4 ea 6 oz boneless skinless chicken breast
- 2 ea fresh avocado, cored and sliced thin
- 1 ea tomato, sliced thin
- 8 ea slices of jalapeno or pepper bacon, cooked
- 8 slices wheat bread (I like a wheat berry)
- 4 slices swiss cheese, optional
- 3 Tblspn butter
Preheat your grill to medium high heat, oil your grill grates
Season your chicken breast with simple kosher salt and coarse black pepper. Grill your chicken breast to completely cooked through.
Butter two slices of wheat bread, and place on a flat top grill or saute pan over medium high heat. On each slice place 4 avocado slices, then a tomato on each slice of wheat bread. Add the bacon to one slice and the chicken breast to the other. At this time if you want use swiss cheese, place it under the chicken breast.
Put the slices together, and grill till golden brown.
